3 eggs and tuna

Ingredients
  

Forthe Tuna Patties
  • 3 eggs
  • 2 cans tuna 5oz each, drained
  • 1 teaspoon salt
  • 1 teaspoon sweet paprika
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • 2 spring onions finely sliced
  • 1 teaspoon lemon zest
  • 2 tablespoons breadcrumbs
  • 2 tablespoons vegetable oil for frying
Forthe Mashed Potatoes
  • 5-6 medium potatoes
  • Salt to taste
  • 2 tablespoons butter
  • 100 ml warm milk
Forthe Creamy Sauce
  • 3 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • 1 teaspoon French mustard
  • 1 pickled cucumber finely diced
  • 1 tablespoon fresh dill chopped
  • Salt and black pepper to taste

Method
 

Forthe Tuna Patties
  1. Drain the tuna thoroughly and place in a mixing bowl.
  2. Crack three eggs into the bowl with tuna.
  3. Add salt, sweet paprika, and black pepper to the mixture.
  4. Chop parsley finely and add to the bowl.
  5. Slice spring onions and add to the mixture.
  6. Grate lemon peel directly into the bowl.
  7. Mix everything well until combined.
  8. Add breadcrumbs to help bind the mixture.
  9. Stir again until ingredients are evenly distributed.
  10. Heat vegetable oil in a pan over medium heat.
  11. Form patties using about 2 tablespoons of mixture each.
  12. Place patties carefully in the hot oil.
  13. Fry 3-4 minutes until golden brown on bottom.
  14. Flip patties and cook another 3-4 minutes.
  15. Remove and place on paper towels to drain excess oil.
Forthe Mashed Potatoes
  1. Peel and quarter potatoes and place in a pot.
  2. Cover with water and bring to a boil.
  3. Add salt to the boiling water.
  4. Cook until fork-tender about 15-20 minutes.
  5. Drain potatoes completely.
  6. Add butter to the warm potatoes.
  7. Pour warm milk over potatoes.
  8. Mash until smooth and creamy.
Forthe Creamy Sauce
  1. Combine sour cream and mayonnaise in a small bowl.
  2. Add French mustard and mix well.
  3. Dice pickled cucumber finely.
  4. Add cucumber to sauce and stir.
  5. Chop fresh dill and add to mixture.
  6. Season with salt and pepper to taste.
  7. Mix thoroughly until well combined.
